Valpolicella Classico Superiore is a DOC denomination wine produced in Veneto by the well-known Giuseppe Quintarelli winery, located on the first hills of Negrar, 350 meters above sea level. The moderately continental climate typical of Valpolicella and the mainly calcareous soil give the wine its organoleptic characteristics. The vines used for the production of this still red are corvina, molinara and rondinella.
Corvina is an autochthonous black grape variety from the Veneto region and has moderate, regular productivity.
Molinara is an autochthonous vine of Veneto, whose dark red / violet berries have a thick and very pruinose skin. The rondinella is a particularly resistant grape, also native to the Veneto region, which presents itself with compact pyramidal bunches, whose blue / black berries have a thick and very pruinose skin. The climate of Valpicella is characterized by fresh winds from Lessina which favor viticulture. These in fact make the temperatures during the summer nights cool, facilitating the temperature variations that positively influence the aromatic ripening of the grapes.
The vinification process begins with the harvest which is carried out strictly by hand, for a careful and painstaking selection of the bunches, in small wooden cases. Subsequently the grapes are subjected to light pressing, maceration for 2 months and spontaneous alcoholic fermentation, with the use of indigenous yeasts for 7/8 days. The subsequent refinement phase, which lasts 6 years, takes place in large Slavonian oak barrels.
